Ingredients

  • 6 chicken breasts, boned and pounded flat
  • 1 egg, lightly beaten
  • bread crumbs (may use Italian bread crumbs)
  • 1 large can tomato sauce
  • 2 tsp. basil
  • 2 garlic cloves, crushed
  • salt to taste
  • 2 Tbsp. butter
  • Parmesan cheese
  • Mozzarella cheese

Instructions

  1. Roll each chicken breast in beaten egg, lightly salt, then coat with bread crumbs.
  2. Fry chicken breasts in oil until medium brown; they do not need to be fully cooked yet.
  3. Drain on paper towels and arrange in a 9×13×2‑inch baking pan.
  4. Heat the tomato sauce in a saucepan.
  5. Add basil, crushed garlic, salt, and butter to the sauce.
  6. Simmer over low heat for 15 minutes.
  7. Pour the seasoned sauce over the chicken breasts, ensuring they are covered.
  8. Sprinkle Parmesan cheese over each breast.
  9. Cover the pan with foil and bake at 375°F for 30 minutes.
  10. Remove the foil from the pan.
  11. Top each breast with shredded mozzarella cheese and return to the oven uncovered.
  12. Bake until the cheese melts and bubbles, about 10 minutes.
  13. Serve hot with spaghetti, linguine, or potatoes au gratin.
