Ingredients

  • 1 lb. fresh jumbo shrimp
  • 2 eggs
  • toasted almonds
  • 2 Tbsp. tomato sauce
  • 1 tsp. cornstarch
  • 1/4 cup water
  • 5 slices bacon
  • 1 spring onion
  • 1 Tbsp. Worcestershire sauce
  • 4 dashes Tabasco sauce

Instructions

  1. Peel the shrimp and split them along the back, but do not cut all the way through.
  2. Wash and dry the shrimp with a towel.
  3. Cut the bacon into three pieces each.
  4. Spread the shrimp open and place a piece of bacon on top of each.
  5. Warm a skillet over medium heat.
  6. Dip each shrimp into the beaten eggs, then place them in the skillet with the bacon side down.
  7. Brown the shrimp until crisp and then turn to cook the other side until done. Remove from skillet.
  8. Saute the sliced spring onion in the skillet for several minutes.
  9. Add Worcestershire sauce, Tabasco sauce, and chicken broth to the skillet.
  10. Cover and cook for 3 minutes.
  11. Thicken the sauce with a mixture of cornstarch and water.
  12. Pour the gravy over the shrimp and top with spring onions and cracked toasted almonds.
