Chicken Pilou
A flavorful Puerto Rican chicken and rice dish with caramelized sugar, seasoned chicken, pigeon peas, and aromatic spices, perfect for family dinners and gatherings.

Instructions
- Mix chicken and all seasonings together.
- Preheat a Dutch oven pot and cover the bottom with cooking oil.
- Place the sugar in the center of the pot and allow it to brown to a caramel color.
- Stir to mix the caramelized sugar with the oil.
- Add the chicken and sauté until almost tender.
- Add enough water to cover the chicken about 2 inches above.
- Add rice and stir.
- Ensure the rice is half water and half rice by testing with a spoon.
- Continue adding rice until the mixture in the spoon shows half rice and half water.
- Simmer until the rice is absorbed and fluffy, stirring occasionally and folding the rice from the sides inward.
- Cover and simmer over very low heat until done.
