Instructions

  1. Mix chicken and all seasonings together.
  2. Preheat a Dutch oven pot and cover the bottom with cooking oil.
  3. Place the sugar in the center of the pot and allow it to brown to a caramel color.
  4. Stir to mix the caramelized sugar with the oil.
  5. Add the chicken and sauté until almost tender.
  6. Add enough water to cover the chicken about 2 inches above.
  7. Add rice and stir.
  8. Ensure the rice is half water and half rice by testing with a spoon.
  9. Continue adding rice until the mixture in the spoon shows half rice and half water.
  10. Simmer until the rice is absorbed and fluffy, stirring occasionally and folding the rice from the sides inward.
  11. Cover and simmer over very low heat until done.
