  1. Remove giblets and neck from the chicken, then rinse the chicken well under cold water.
  2. Place the chicken, breast side down, in an 8-quart kettle.
  3. Add carrots, cut into 1-inch pieces, celery cut into 1-inch pieces, onion sliced, 1 teaspoon salt, bay leaf, and 1 quart of water.
  4. Bring to a boil over high heat, then reduce heat and simmer, covered, for about 2 hours, or until the chicken is tender.
  5. Let the chicken stand, uncovered, and frequently spoon broth over it for 1 hour, or until cool enough to handle.
  6. Remove the meat from the bones in large pieces as possible.
  7. Pull the skin from the chicken.
  8. Cut the chicken into 1/2 to 1-inch chunks.
  9. Chill the chicken before assembling the salad.
  10. In a bowl, combine mayonnaise or salad dressing, lemon juice, milk or light cream, 1 teaspoon salt, and a dash of pepper to make the dressing.
  11. Mix the shredded chicken with the chopped vegetables and pineapple chunks.
  12. Add the dressing and toss gently to coat evenly.
  13. Serve chilled.
