  • 2 Tbsp. butter
  • 1/4 c. all-purpose flour
  • 1 egg
  • 1/4 c. shredded process Swiss cheese
  • 2 c. finely chopped cooked or canned chicken
  • 1/4 c. finely chopped celery
  • 2 Tbsp. chopped pimiento
  • 1/4 c. mayonnaise

Instructions

  1. Melt butter in 1/4 cup boiling water.
  2. Add flour and dash of salt; stir vigorously until mixture forms a ball that doesn't separate.
  3. Remove from heat and cool slightly.
  4. Add egg and beat vigorously until smooth.
  5. Stir in Swiss cheese.
  6. Drop dough onto greased baking sheet, using 1 level teaspoon for each puff.
  7. Bake at 400° for about 20 minutes.
  8. Remove puffs from oven; cool and cut apart.
  9. Combine remaining ingredients: chopped cooked chicken, chopped celery, chopped pimiento, mayonnaise, 1/2 teaspoon salt, and dash of pepper.
  10. Fill each puff with 2 teaspoons of the chicken mixture.
