Chicken Rockefeller features tender chicken breasts topped with a savory spinach and Parmesan mixture, baked with crispy bread crumbs and butter for a rich, flavorful dish suitable for special occasions.

Ingredients

  • 10 oz. frozen chopped spinach
  • 1 egg
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup Italian style bread crumbs
  • 3 whole chicken breasts, split, boned and skinned
  • salt and pepper to taste
  • 3 Tbsp. melted butter or margarine

Instructions

  1. Cook spinach; drain and cool.
  2. Combine spinach, beaten egg, and 1 tablespoon of Parmesan cheese.
  3. Combine remaining Parmesan cheese and bread crumbs in a shallow dish.
  4. Season chicken with salt and pepper; roll in bread crumb mixture.
  5. Place in a greased 2-quart baking dish.
  6. Mound large spoonfuls of spinach mixture on each chicken breast.
  7. Sprinkle with remaining bread crumb mixture and drizzle with melted butter.
  8. Bake at 350°F (175°C) for 35 to 40 minutes.
