Ingredients

  • 1 1/2 cups cubed cooked chicken
  • 1/2 cup sliced celery
  • 2 tablespoons raisins
  • 2 tablespoons chopped green onions
  • 1/2 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1/2 teaspoon curry powder
  • 1 cup fresh spinach leaves
  • 1 medium red apple
  • 2 (6-inch) pita bread

Instructions

  1. In a medium bowl, combine cubed cooked chicken, sliced celery, raisins, and chopped green onions.
  2. In a small bowl, mix mayonnaise, lemon juice, and curry powder until well blended.
  3. Pour the dressing over the chicken mixture and stir to combine.
  4. Arrange 1/4 of the spinach leaves and 1/4 of the apple slices in each pita pocket, with pieces extending slightly over the edge.
  5. Spoon 1/4 of the chicken salad mixture into each pocket.
