Ingredients

  • 1 cooked and boned chicken fryer
  • 6 to 8 tortillas (corn or flour)
  • 1 medium onion, chopped
  • 1 (10 oz.) cream of chicken soup
  • 1/2 can (1/2 cup) tomatoes and chilies (Ro-Tel)
  • 2 Tbsp. quick cooking tapioca
  • 2 cups grated Cheddar cheese

Instructions

  1. Cut the cooked and boned chicken into bite-sized pieces.
  2. Mix the chicken with cream of chicken soup, tomatoes and chilies, and tapioca until well combined.
  3. Line the bottom of the crock-pot with broken tortillas.
  4. Add one-third of the chicken mixture over the tortillas.
  5. Sprinkle with chopped onion and grated Cheddar cheese.
  6. Repeat layers of tortillas, chicken mixture, onion, and cheese until all ingredients are used.
  7. Cover and cook on low for 6 to 8 hours or on high for about 3 hours.
