- Cut the cooked and boned chicken into bite-sized pieces.
- Mix the chicken with cream of chicken soup, tomatoes and chilies, and tapioca until well combined.
- Line the bottom of the crock-pot with broken tortillas.
- Add one-third of the chicken mixture over the tortillas.
- Sprinkle with chopped onion and grated Cheddar cheese.
- Repeat layers of tortillas, chicken mixture, onion, and cheese until all ingredients are used.
- Cover and cook on low for 6 to 8 hours or on high for about 3 hours.
