Creamy chicken chili enchiladas feature tender chicken, melted cheeses, and flavorful chili sauce wrapped in soft corn tortillas, perfect for comforting family dinners or casual gatherings.

Ingredients

  • 1 1/2 c. sharp Cheddar cheese, shredded
  • 2 c. Monterey Jack cheese, shredded
  • 1 1/2 c. chopped cooked chicken breasts
  • 3/4 c. finely chopped onion
  • 12 (6-inch) corn tortillas
  • 2 c. warm chicken broth
  • 1 can chili without beans
  • 1 (10 oz.) can enchilada sauce

Instructions

  1. Grease a large baking dish.
  2. Mix all Cheddar cheese, half of Monterey Jack cheese, cooked chicken, and chopped onion. Set aside.
  3. Dip each tortilla in warm chicken broth to soften.
  4. Fill each tortilla with about 1/4 cup of the chicken mixture.
  5. Roll up the tortillas and place seam side down in the prepared baking dish.
  6. Pour enchilada sauce over the assembled tortillas.
  7. Sprinkle remaining Monterey Jack cheese on top.
  8. Bake in a preheated oven at 375°F (190°C) for 25-30 minutes until cheese is melted and bubbly.
