Ingredients

  • 1 chicken
  • 1 pkg. Virgo seasoning
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1 can stewed tomatoes
  • 1/4 c. white cooking wine
  • 1/4 c. olive oil
  • 2 Tbsp. chopped garlic
  • 2 c. diced potatoes
  • 1 small box vermicelli
  • 1 tsp. oregano

Instructions

  1. Boil the chicken and remove it from the broth and bones.
  2. Skim fat from the broth.
  3. Add diced bell pepper, diced onion, stewed tomatoes, white cooking wine, olive oil, chopped garlic, diced potatoes, Virgo seasoning, and oregano to the broth.
  4. Cook until the potatoes are tender.
  5. Add the vermicelli noodles to the broth.
  6. Cook on low for 1 hour.
  7. Add water to the broth as needed during cooking.
  8. Serve hot with Parmesan cheese sprinkled on top.
