Ingredients

  • 4 Tbsp butter
  • 2 apples, cored and cut into 1/4-inch chunks
  • 2 whole chicken breasts, skinless and boneless
  • salt and pepper
  • 1 onion, chopped small
  • 2/3 cup sherry or apple juice
  • 1/3 cup heavy cream

Instructions

  1. Melt 1 tablespoon butter in a pan.
  2. Add apples; sauté for 30 seconds to 1 minute.
  3. Remove apples; add another tablespoon butter and sauté onions over medium flame until translucent.
  4. Add chicken breasts over onions; pour in sherry or apple juice.
  5. Cook for 5 minutes on each side, covered, over medium heat.
  6. Add heavy cream to the remaining sauce and simmer for 5 to 7 minutes until thickened.
