  • sage
  • rosemary
  • salt and pepper
  • 2 Tbsp. butter
  • 2 c. flour

  1. Preheat oven to 350°F (175°C).
  2. Dredge chicken pieces in seasoned flour and fry until browned on all sides.
  3. Meanwhile, place all but one garlic clove in a heavy Dutch oven.
  4. Place the browned chicken over the garlic in the Dutch oven.
  5. Sprinkle liberally with parsley, thyme, sage, rosemary, salt, and pepper.
  6. Place the remaining garlic clove in a small pan with the butter and simmer until melted.
  7. Pour the garlic butter over the chicken.
  8. Cover the Dutch oven and bake in the preheated oven for about 60 minutes.

Tips & Substitutions

To enhance the flavor, consider marinating the chicken in the herbs and garlic overnight before cooking. If you want a lighter dish, use less oil for frying or opt for an air fryer. For a unique twist, you can add a splash of white wine to the garlic butter before pouring it over the chicken. Make sure to keep an eye on the garlic while it simmers to avoid burning.

Serving Suggestions

Serve this garlicky chicken with a side of roasted vegetables or a fresh salad for a complete meal. It pairs beautifully with a light, crusty bread to soak up the delicious garlic butter. For a heartier option, consider serving it alongside creamy mashed potatoes or a flavorful grain dish like quinoa to balance the richness.

Storage & Reheating

Leftover chicken can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, place the chicken in a preheated oven at 350°F (175°C) for about 20 minutes or until heated through. Alternatively, you can microwave it on medium power, but be cautious as this can make the chicken dry.

Frequently Asked Questions

Can I use chicken breasts instead of a whole frying chicken?

Yes, you can use chicken breasts, but adjust the cooking time accordingly. Boneless, skinless breasts will cook faster, so check for doneness after about 30-40 minutes in the oven. Be sure to keep the garlic butter for extra flavor.

What can I do if I don't have fresh herbs?

If fresh herbs aren't available, you can substitute dried herbs. Use about one-third of the amount of dried herbs as you would fresh. For example, if the recipe calls for 1 tablespoon of fresh, use 1 teaspoon of dried thyme, sage, etc. Just add them with the garlic.

Is it necessary to cover the Dutch oven while baking?

Yes, covering the Dutch oven helps retain moisture and allows the chicken to cook evenly, ensuring it stays juicy. If you prefer a crispy skin, you can uncover the pot for the last 10-15 minutes of baking.
