Ingredients

  • 1 chicken (3 lb.)
  • 1/3 cup soy sauce
  • 1/2 teaspoon dry mustard
  • 1 package slivered almonds
  • 3 (10 oz.) packages frozen Hawaiian-style vegetables
  • vegetable oil
  • 1 (12 oz.) can Chinese-style fried rice
  • 1/3 cup brown sugar
  • 1/4 cup cold water
  • 1/2 cup hot water
  • 1 tablespoon minced parsley

Instructions

  1. In a saucepan over low heat, stir together the brown sugar, soy sauce, cold water, 3 tablespoons of vegetable oil, and dry mustard until the sugar is dissolved.
  2. Cool the mixture to room temperature.
  3. Pour the marinade over the chicken in a bowl and marinate at room temperature for 2 hours or overnight in the refrigerator.
  4. Preheat the broiler and place the vegetables at the center of a broiler pan.
  5. Place a rack over the vegetables and brush them with oil.
  6. Add the marinated chicken on top of the rack and brush it with oil.
  7. Cook the chicken for 20 minutes, turning once and basting often.
  8. In a separate pan, combine the rice and hot water, then drizzle with some of the marinade.
  9. Place the rice and vegetables near the chicken and cook for about 15 minutes, turning the chicken and stirring the rice occasionally. The chicken will become quite dark.
  10. Serve the chicken and rice on a platter, sprinkled with slivered almonds and minced parsley.
