Ingredients

  • 4 large chicken breasts, halved and skinned
  • 1/4 cup flour
  • 1/2 cup butter
  • 1 pound mushrooms, quartered
  • 1 tablespoon minced onion
  • 1 cup cream
  • 1/4 cup dry sherry
  • 1 1/2 teaspoons salt
  • 1/8 teaspoon pepper
  • 2 tablespoons water

Instructions

  1. Coat the chicken breasts with flour.
  2. Brown the chicken in butter until golden brown, then set aside.
  3. In the same pan, sauté the minced onion and quartered mushrooms until tender.
  4. Add the cream, dry sherry, salt, and pepper to the mushroom mixture.
