Chickpea Dip (Hummus)

A creamy, flavorful chickpea dip with lemon, garlic, and tahini-like elements, perfect for snacking or as a spread for vegetables and bread, suitable for any occasion.

Ingredients

  • 1 (20 oz.) can chickpeas
  • 1/2 tsp. salt
  • ground black pepper
  • 1 Tbsp. safflower oil
  • 1 large clove garlic
  • 1/2 tsp. sesame seed
  • 2 Tbsp. lemon juice

Instructions

  1. Drain the chickpeas thoroughly, reserving the liquid.
  2. Combine the chickpeas with salt, black pepper, safflower oil, minced garlic, sesame seed, and lemon juice in a blender jar.
  3. Blend until creamy.
  4. If necessary, add some of the reserved chickpea liquid to reach the desired consistency.
  5. Serve chilled and sprinkle with chopped parsley if desired.
