  • 1/4 tsp. crushed red pepper
  • 1 bay leaf
  • 1 (28 oz.) can no salt added Italian style plum tomatoes with the juice
  • 2 c. elbow macaroni or small tubular pasta
  • 1 Tbsp. grated Parmesan cheese

Instructions

  1. Heat oil in a large skillet over medium heat.
  2. Add chopped onion and cook until tender, about 3 to 5 minutes.
  3. Add crushed garlic and cook for 1 minute more.
  4. Stir in chickpeas, oregano, black pepper, crushed red pepper, and bay leaf.
  5. Cook, stirring and crushing half the chickpeas with the back of a spoon, until heated through, about 5 minutes.
  6. Add tomatoes with juice and bring to a boil over medium-high heat.
  7. Break up tomatoes with the side of a spoon and reduce heat to medium-low.
  8. Cover and simmer for 10 minutes.
