- Preheat the oven to 400°F. Spray an 8 x 8-inch pan with cooking spray.
- Mix melted butter, beaten eggs, flour, baking powder, seasoned salt, chopped green chiles, cottage cheese, grated Monterey Jack, grated Cheddar, and chopped green onion until well combined.
- Pour the mixture into the prepared pan.
- Bake for 15 minutes at 400°F.
- Reduce oven temperature to 350°F and continue baking for 35 to 40 minutes, until lightly browned.
- Allow to slightly cool, then cut into small squares.
- Serve hot or cold. Can be chilled and reheated.
- If using a glass pan, reduce oven temperature by 25°F.
