Ingredients

  • 1/4 cup melted butter
  • 5 eggs
  • 1/4 cup flour
  • 1/2 teaspoon baking powder
  • dash seasoned salt
  • 1 (4 oz) can chopped green chiles
  • 8 oz cottage cheese
  • 1/4 pound Monterey Jack cheese, grated
  • 1/4 pound sharp Cheddar cheese, grated
  • 1 green onion

Instructions

  1. Preheat the oven to 400°F. Spray an 8 x 8-inch pan with cooking spray.
  2. Mix melted butter, beaten eggs, flour, baking powder, seasoned salt, chopped green chiles, cottage cheese, grated Monterey Jack, grated Cheddar, and chopped green onion until well combined.
  3. Pour the mixture into the prepared pan.
  4. Bake for 15 minutes at 400°F.
  5. Reduce oven temperature to 350°F and continue baking for 35 to 40 minutes, until lightly browned.
  6. Allow to slightly cool, then cut into small squares.
  7. Serve hot or cold. Can be chilled and reheated.
  8. If using a glass pan, reduce oven temperature by 25°F.
