Ingredients

  • 10 eggs
  • 1/2 cup flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 pint cottage cheese
  • 1 lb grated Monterey Jack cheese
  • 1/2 cup melted butter
  • 2 (4 oz.) cans chopped chiles

Instructions

  1. Grease a 9 x 13-inch baking pan.
  2. Beat the eggs until light and fluffy.
  3. In a large bowl, combine the beaten eggs, flour, baking powder, salt, melted butter, cottage cheese, grated Monterey Jack cheese, and chopped chiles. Mix until well incorporated.
  4. Pour the batter into the prepared pan, smoothing the top.
  5. Bake for 35 minutes at 350°F, or until the top is golden brown and a toothpick inserted into the center comes out clean.
