Ingredients

  • 1 c. 100% bran cereal
  • 1 c. oats
  • ¾ c. walnuts
  • 1 c. raisins or dates
  • ½ tsp. cinnamon
  • ½ tsp. baking soda
  • ¼ tsp. salt (optional)
  • ½ c. plain yogurt
  • ½ c. honey
  • 2 eggs
  • ½ c. vegetable oil

Instructions

  1. In a medium bowl mix 1 c. bran cereal, 1 c. oats, ½ tsp. cinnamon, ½ tsp. baking soda, and ¼ tsp. salt.
  2. Add ¾ c. walnuts and 1 c. raisins or dates, stirring to combine.
  3. In a small bowl lightly beat 2 eggs. Mix in ½ c. plain yogurt, ½ c. honey, and ½ c. vegetable oil until smooth.
  4. Pour the wet mixture into the dry ingredients and stir until fully incorporated.
  5. Line a 9 × 9‑inch pan with butter or parchment paper and press the batter evenly into the pan.
  6. Bake at 350 °F for 45 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.
  7. Remove from oven and let cool completely in the pan, then cut into bars.
