High Fiber Bars
Crunchy, sweet high‑fiber bars packed with bran, oats, nuts, and dried fruit—perfect for a quick breakfast or a post‑workout pick‑me‑up.

- In a medium bowl mix 1 c. bran cereal, 1 c. oats, ½ tsp. cinnamon, ½ tsp. baking soda, and ¼ tsp. salt.
- Add ¾ c. walnuts and 1 c. raisins or dates, stirring to combine.
- In a small bowl lightly beat 2 eggs. Mix in ½ c. plain yogurt, ½ c. honey, and ½ c. vegetable oil until smooth.
- Pour the wet mixture into the dry ingredients and stir until fully incorporated.
- Line a 9 × 9‑inch pan with butter or parchment paper and press the batter evenly into the pan.
- Bake at 350 °F for 45 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.
- Remove from oven and let cool completely in the pan, then cut into bars.
