Ingredients

  • 1 (4 oz.) can diced, peeled green chilies, drained
  • 8 oz. shredded Monterey Jack or sharp Cheddar cheese
  • 1 cup biscuit baking mix
  • 1 cup light cream
  • 4 eggs
  • 1/4 teaspoon salt
  • 1/4 cup sliced pimiento-stuffed olives

Instructions

  1. Sprinkle drained green chilies and shredded cheese evenly in the bottom of a lightly greased 9-inch square pan.
  2. In a medium bowl, combine biscuit baking mix, light cream, eggs, and salt; beat until the mixture is smooth and well blended.
  3. Pour the batter over the chili and cheese layer in the pan.
  4. Bake at 375°F (190°C) for 30 minutes or until the top is golden and a toothpick inserted in the center comes out clean.
  5. Garnish with sliced pimiento-stuffed olives before serving.
