Creamy, cheesy, and mildly spicy, Chili Con Queso Blanco is perfect for dipping tortilla chips at gatherings or casual snacking, offering warm comfort and bold flavors.

Ingredients

  • 1 large onion, chopped
  • 2 Tbsp. butter
  • 1 (8 oz.) pkg. cream cheese
  • 1 (16 oz.) can Ro-Tel tomatoes, drained and chopped
  • 2 (4 oz.) cans green chilies, chopped
  • 1/4 c. heavy cream

Instructions

  1. Saute chopped onion in butter until translucent.
  2. Add melted cream cheese to the onion and stir until combined.
  3. Stir in drained and chopped Ro-Tel tomatoes and chopped green chilies.
  4. Add heavy cream and heat gently, avoiding boiling.
  5. Garnish with cilantro before serving.
  6. Serve in a chafing dish with tortilla chips.
