Ingredients

  • 1 c. flour
  • 1 c. yellow cornmeal
  • 4 tsp. baking powder
  • 1/2 tsp. salt
  • 2 Tbsp. sugar
  • 6 oz. sharp Cheddar cheese, grated
  • 1 (8 1/2 oz.) can cream-style corn
  • 1 (4 oz.) can chopped green chilies, drained
  • 1/3 c. milk
  • 1/4 c. vegetable oil
  • 2 large eggs

Instructions

  1. Combine flour, cornmeal, baking powder, salt, and sugar in a bowl.
  2. Stir in grated Cheddar cheese, cream-style corn, chopped green chilies, milk, and vegetable oil.
  3. In a small bowl, beat the eggs and add to the cornmeal mixture, stirring only until blended.
  4. Pour the batter into an oiled 9-inch square baking pan.
  5. Bake at 400°F (200°C) until golden brown, about 30 to 35 minutes.
