Ingredients

  • 1 lb dried large lima beans
  • 2 lb ground beef
  • 1/2 cup chopped green pepper
  • 1 cup chopped onion
  • 2 cloves garlic
  • 2 teaspoons salt
  • 3 tablespoons chili powder
  • 1 teaspoon sugar
  • 1 pint chopped tomatoes

Instructions

  1. Soak dried large lima beans overnight.
  2. Cook the beans until tender, season with bacon or ham hock, then drain and place in a large casserole dish.
  3. Brown the ground beef in a skillet; add chopped onion, chopped green pepper, minced garlic, salt, and chili powder. Mix well.
  4. Add chopped tomatoes and sugar to the meat mixture.
  5. Pour the seasoned meat mixture over the cooked beans.
  6. Mix lightly and bake at 375°F for 30 minutes.
