Ingredients

  • 2 lb. ground beef
  • 1 large onion
  • 2 c. macaroni
  • 2 cans dark red kidney beans
  • 1 can tomato juice
  • 2 Tbsp. chili powder
  • 2 tsp. salt
  • 2 c. shredded Cheddar cheese

Instructions

  1. Brown ground beef in a skillet.
  2. Boil macaroni until tender.
  3. Add chopped onion to the ground beef just before it is done browning.
  4. In a large kettle over low heat, combine tomato juice, chili powder, and salt.
  5. Allow the mixture to start simmering.
  6. Once simmering, add the cooked ground beef with onion and the kidney beans.
  7. Cook over very low heat for 1 hour.
  8. Top with shredded Cheddar cheese and serve.
