Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 Tbsp chili powder
  • 1 can corn soup
  • 1/2 cup water
  • salt and pepper to taste
  • 2 cups mashed potatoes or instant mix
  • 1/2 cup shredded reduced-fat Cheddar cheese

Instructions

  1. In a 10-inch skillet, cook the ground beef and chopped onion with chili powder until the onion is tender and the meat is cooked through.
  2. Stir in half the corn soup, water, salt, and pepper.
  3. Bring everything to a boil and simmer for 5 minutes.
  4. Spread the mashed potatoes over the meat mixture.
  5. Sprinkle shredded reduced-fat Cheddar cheese on top.
  6. Bake or broil until cheese is melted and bubbly, if desired.
