Ingredients

  • 3 lb. sirloin steak
  • 1/2 cup shredded Monterey Jack cheese with jalapenos
  • 1 large clove garlic
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt (optional)
  • cilantro sprigs (optional)

Instructions

  1. Cut a pocket in the steak by making a horizontal cut through the center of the steak, about 1 inch from each side, parallel to the surface.
  2. Combine the shredded Monterey Jack cheese with jalapenos, crushed garlic, and chili powder.
  3. Stuff the cheese mixture evenly into the pocket of the steak.
  4. Close the pocket with picks to secure the filling.
  5. Place the steak on the grill over medium-low coals.
  6. Cover the grill and cook for 30 to 36 minutes for rare to medium doneness.
  7. Remove from grill and cool briefly before slicing crosswise to serve.
