Ingredients

  • 1 can cream of vegetable soup
  • 1/2 can water
  • 1 lb ground beef
  • 1 egg
  • 1/4 tsp salt
  • 2 Tbsp dry bread crumbs
  • 2 Tbsp chopped onion
  • 1 Tbsp chopped parsley
  • dash pepper
  • 1 Tbsp shortening

Instructions

  1. Blend the cream of vegetable soup and water together.
  2. Measure out 1/4 cup of the soup mixture and combine with ground beef, egg, salt, bread crumbs, chopped onion, parsley, and pepper.
  3. Shape the mixture into 12 meatballs.
  4. Brown the meatballs in shortening until cooked through and browned on all sides.
  5. Add the remaining soup mixture to the meatballs.
  6. Cover and simmer for 20 minutes, stirring occasionally.
  7. If the sauce is too thin, remove the cover and cook a few additional minutes to thicken.
