Ingredients

  • 1 lb. ground beef
  • 1 small green pepper, chopped
  • 1 (1 3/4 oz.) pkg. chili seasoning mix
  • 2 c. water
  • 1 (15 1/4 oz.) can kidney beans (undrained)
  • 1 (15 oz.) can tomato sauce
  • 1 (7 oz.) can whole kernel corn, drained
  • 2 c. rice (uncooked)

Instructions

  1. Cook and stir ground beef, chopped green pepper, and chili seasoning mix in a large skillet until the meat is browned.
  2. Add water, kidney beans with liquid, and tomato sauce; bring to a boil.
  3. Reduce heat to low, cover, and simmer for 10 minutes, stirring occasionally.
  4. Stir in drained corn and return to a boil.
  5. Add uncooked rice, cover, and remove from heat.
  6. Let stand for 5 minutes.
  7. Stir the chili mixture well and serve topped with shredded cheese, chopped onion, sour cream, and salsa.
