Ingredients

  • 1 lb pork roast
  • 12 oz can diced green chilies
  • 1/2 cup oil
  • 1/2 cup flour
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 2 bay leaves
  • 1 large onion

Instructions

  1. Cook the pork roast with bay leaves until tender. Cool, then dice the pork.
  2. Place the diced pork in a stock pot.
  3. Add 3 to 4 quarts of water to the pot.
  4. Add the green chilies, chopped onion, salt, pepper, and garlic powder.
  5. Bring the mixture to a boil.
  6. In a measuring cup, combine 1/2 cup oil and 1/2 cup flour, mixing well.
  7. Gradually add the oil and flour mixture to the boiling pot while stirring to prevent lumps.
  8. Continue stirring until the chili thickens, then remove from heat and serve.
