Spicy Stuffed Peppers
Spicy stuffed peppers offer a flavorful combination of ground meat, rice, vegetables, and spices, perfect for a hearty, colorful main course or appetizer for any occasion.
Ingredients
- 4 medium green, red or yellow sweet peppers ⓘ
- 2 Tbsp. water ⓘ
- 3/4 lb. lean ground pork or beef ⓘ
- 1/2 c. finely chopped onion ⓘ
- 1/2 c. finely chopped carrot ⓘ
- 1 clove garlic, minced ⓘ
- 1 (8 oz.) can tomato sauce ⓘ
- 1/2 c. cooked rice ⓘ
- 1/4 c. raisins ⓘ
- 1 tsp. chili powder ⓘ
- 1/4 tsp. salt ⓘ
- 1/8 tsp. ground allspice ⓘ
- few dashes of bottled hot pepper sauce ⓘ
Instructions
- Cut tops from peppers; discard seeds and membranes.
- Chop enough of the tops to make 1/2 cup; set aside.
- Place peppers, cut side up, in an 8 x 8 x 2-inch baking dish.
- Add water and cover with vented clear plastic wrap.
- Cook on high power for 3 to 5 minutes or until peppers are barely tender, giving dish a half-turn once.
- Drain and set aside.
