Ingredients

  • 2 c. diced roast beef
  • 1 small can green chilies
  • 1 small onion, chopped
  • 1/2 tsp. cumin
  • garlic to taste
  • 1 bouillon cube

Instructions

  1. Put diced roast beef, green chilies, chopped onion, cumin, garlic, and the bouillon cube in a pan with just enough water to cover and simmer until onions are done.
  2. Add 2 tablespoons of cornstarch to the mixture to thicken.
  3. Wrap the mixture in flour tortillas like enchiladas.
  4. Place the wrapped tortillas far apart on a greased cookie sheet.
  5. Brush the tortillas with melted butter and bake at 350°F until brown.
  6. Top with cheese, lettuce, sour cream, or your preferred toppings.
