Ingredients

  • 1 Tbsp. oil
  • 2 c. chicken, baked and diced
  • 3 scallions, chopped
  • 1 celery stalk, diced
  • 1 carrot, shredded thin
  • 2 1/2 c. cabbage, shredded
  • 1/2 c. chicken broth
  • 1 Tbsp. cornstarch
  • 1/4 c. water
  • 2 Tbsp. soy sauce

Instructions

  1. In a large skillet, heat oil until hot.
  2. Add water chestnuts, celery, carrots, and cabbage to the skillet.
  3. Cover and cook over medium-high heat for about 2 minutes.
  4. Add baked chicken to the skillet.
  5. Pour chicken broth into the center of the mixture.
  6. Cover and steam for 1 minute.
  7. Dissolve cornstarch in water to make a slurry.
  8. Add soy sauce to the skillet, then toss with the chicken and vegetables to thicken the sauce and coat all ingredients.
  9. Serve immediately over rice, noodles, or chow mein noodles.
