Ingredients

  • 2 cups Chinese vegetables
  • 2 Tbsp. soy sauce
  • 1/2 cup diced green onions

Instructions

  2. Beat eggs in a separate bowl, then add to the vegetable mixture and combine well.
  3. Heat oil in a skillet over medium heat.
  4. Pour a portion of the egg mixture into the skillet, shaping into a round pancake.
  5. Cook until the eggs are set and golden brown on both sides, about 3-4 minutes per side.
  6. Repeat with remaining mixture, adding more oil as needed.
