Ingredients

  • 10 to 16 oz. choice pork loin or chicken breasts
  • 2 lb. Chinese flat fresh noodles or 1 lb. Pennsylvania Dutch egg noodles
  • 1 lb. fresh bean sprouts
  • 2 (8 oz.) cans bean sprouts
  • 2 or 3 stalks fresh scallions
  • 4 oz. peanut oil or corn oil
  • 1 Tbsp. sesame oil
  • 4 Tbsp. oyster sauce or soy sauce
  • 1 Tbsp. sugar
  • salt as desired

Instructions

  1. Bring water to a boil and cook the noodles in boiling water for 5 to 8 minutes, stirring occasionally.
  2. Do not overcook. Drain the noodles into a colander and rinse with cold water. Let drain well.
  3. In a wok or large skillet, heat the peanut or corn oil over medium-high heat.
  4. Add sliced pork, chicken, or beef, and stir-fry until cooked through.
  5. Add the drained noodles to the wok, along with oyster or soy sauce, sesame oil, sugar, and salt to taste.
  6. Stir-fry everything together until well combined and heated through.
  7. Add bean sprouts and chopped scallions, and cook for another minute.
  8. Serve hot, garnished with additional scallions if desired.
