Ingredients

  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground ginger
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground cloves
  • 2 eggs
  • 1 cup pumpkin
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 1 cup Kellogg's All-Bran cereal
  • 1 cup semi-sweet chocolate morsels
  • 1 cup nuts

Instructions

  1. Sift together flour, baking powder, baking soda, salt, ginger, cinnamon, ground cloves, and sugar. Set aside.
  2. In a large mixing bowl, beat eggs until foamy.
  3. Add pumpkin, vegetable oil, and Kellogg's All-Bran cereal; mix well.
  4. Add the sifted dry ingredients, mixing only until combined.
  5. Stir in chocolate morsels and nuts.
  6. Spread evenly in an ungreased 10 x 4-inch tube pan.
  7. Bake in a moderate oven at 350°F (175°C) for about 1 hour and 10 minutes or until a wooden pick comes out clean.
  8. Cool completely before removing from the pan.
  9. Place on a cake plate.
  10. Can be eaten plain or with a confectioners' sugar glaze.
