Decadent chocolate caramel corn combines crunchy popcorn with rich cocoa, sweet caramel, and toasted pecans, perfect for parties, movie nights, or sweet snack cravings.

Ingredients

  • 10 cups popped popcorn
  • 1 cup pecan halves
  • 1 cup sugar
  • 3 tablespoons unsweetened cocoa
  • 1/2 teaspoon salt
  • 1/2 cup light corn syrup
  • 1/3 cup water
  • 3 tablespoons margarine or butter
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla
  • 1 teaspoon chocolate extract

Instructions

  1. Preheat oven to 250°F (120°C).
  2. In a large bowl, combine popped popcorn and pecan halves; set aside.
  3. In a medium saucepan, combine sugar, cocoa, salt, corn syrup, and water.
  4. Cook over medium heat for 15 minutes or until a candy thermometer reaches 248°F (120°C).
  5. Remove from heat and stir in margarine or butter, baking soda, vanilla, and chocolate extract if desired.
  6. Pour the caramel mixture over the popcorn and pecans, stirring to coat evenly.
  7. Spread the mixture in a 15 x 10 x 1-inch pan.
  8. Bake at 250°F (120°C) for about 30 minutes, stirring every 10 minutes.
  9. Cool completely and break into pieces.
