Ingredients

  • 1 envelope Knox unflavored gelatine
  • 1/4 cup cold water
  • 6 tablespoons cocoa
  • 1/2 cup boiling water
  • 4 eggs separated
  • 1 cup sugar
  • Pinch of salt
  • 1 teaspoon vanilla
  • Whipping cream

Instructions

  1. Pour cold water in a bowl and add the unflavored gelatine; soak.
  2. Mix cocoa and boiling water until smooth.
  3. Add the cocoa mixture to the gelatine and stir well.
  4. Stir in the slightly beaten egg yolks, 1/2 cup sugar, salt, and vanilla; cool the mixture.
  5. Beat the egg whites until they start to get stiff, then gradually add 1/2 cup sugar, beating until stiff peaks form.
  6. When the egg yolk mixture starts to thicken, fold it into the beaten egg whites.
  7. Pour the mixture into a baked pie shell and chill until set.
  8. Just before serving, spread with a light coating of whipped cream.
