  • 1/2 tsp. cream of tartar

Instructions

  1. Measure flour, baking powder, sugar, and salt in a bowl.
  2. Make a well in the center and add oil, egg yolks, water, and vanilla.
  3. Beat with a spoon until smooth.
  4. In a separate bowl, whip egg whites and cream of tartar until very stiff.
  5. Do not underbeat.
  6. Pour egg yolk/flour mixture over whipped egg whites.
  7. Gently fold with a rubber spatula until just blended.
  8. Do not stir vigorously.
  9. Fold in shaved chocolate.
  10. Pour immediately into an ungreased tube or oblong pan.
  11. Bake at 325°F (160°C) for 55 minutes, then increase to 350°F (175°C) for 10 to 15 minutes.
  12. For oblong pan, bake at 350°F (175°C) for 45 to 50 minutes or until top springs back when lightly touched.
  13. Immediately turn the cake upside down, placing the tube part over a funnel or bottle neck, or rest the edge of the oblong pan on two other pans.
  14. Let hang until cold.
  15. Loosen from sides and tube with a spatula.
  16. Turn over and place on a cake plate.
  17. Frost with Buttercream Frosting.
