Ingredients

  • 3/4 cup reduced-calorie tub margarine
  • 1/4 cup plus 2 tablespoons frozen pineapple juice concentrate, thawed
  • 1 teaspoon granulated sugar
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 1/2 cups plus 3 tablespoons flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 3/4 cup currants or dark raisins
  • 3 ounces semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F.
  2. Lightly spray a large cookie sheet with nonstick cooking spray.
  3. In a large bowl, beat together margarine, pineapple juice concentrate, sugar, and vanilla until light and fluffy.
  4. Beat in the egg until light and smooth.
  5. In a separate bowl, mix flour, salt, and baking soda.
  6. Add the dry mixture to the margarine mixture in 3 parts, beating until combined after each addition.
  7. Stir in currants and chocolate chips.
