Ingredients

- 1/4 cup plus 2 tablespoons frozen pineapple juice concentrate, thawed ⓘ
- 1 teaspoon granulated sugar ⓘ
- 1 teaspoon vanilla extract ⓘ
- 1 egg ⓘ
- 1 1/2 cups plus 3 tablespoons flour ⓘ
- 1/2 teaspoon salt ⓘ
- 1/4 teaspoon baking soda
- 3/4 cup currants or dark raisins ⓘ
- 3 ounces semi-sweet chocolate chips ⓘ
Instructions
- Preheat oven to 350°F.
- Lightly spray a large cookie sheet with nonstick cooking spray.
- In a large bowl, beat together margarine, pineapple juice concentrate, sugar, and vanilla until light and fluffy.
- Beat in the egg until light and smooth.
- In a separate bowl, mix flour, salt, and baking soda.
- Add the dry mixture to the margarine mixture in 3 parts, beating until combined after each addition.
- Stir in currants and chocolate chips.
