Ingredients

  • 1 oz unsweetened chocolate
  • 8 Tbsp unsalted butter
  • 1/2 cup packed dark brown sugar
  • 1/3 cup granulated sugar
  • 1 tsp vanilla

  • 1 egg
  • 1/2 tsp baking soda
  • 1 cup flour
  • 12 oz coarsely chopped semi-sweet chocolate

Instructions

  1. In a double boiler over simmering water, melt the unsweetened chocolate.
  2. Allow to cool to room temperature.
  3. In a large bowl, combine butter, dark brown sugar, granulated sugar, vanilla, and salt.
  4. Beat until fluffy.
  5. Beat in the egg and baking soda.
  6. Stir in the cooled melted chocolate and flour.
  7. Stir in the chopped semi-sweet chocolate.
  8. Transfer the dough to a small bowl and refrigerate for 4 hours or overnight.
  9. Preheat the oven to 350°F (175°C).
  10. Lightly grease the baking sheet.
  11. Use 2 to 3 tablespoons of dough for each cookie, shape into balls.
  12. Bake 5 or 6 cookies at a time for 12 minutes.
  13. Do not overbake.
  14. Cool on the cookie sheet for 2 minutes, then transfer to paper towels for 2 minutes, then transfer to a rack to cool.
  15. Cool sheets between batches.
