Ingredients
- 2 cups all-purpose flour ⓘ
- 2 1/2 teaspoons baking soda ⓘ
- 1 tablespoon cinnamon ⓘ
- 1/2 teaspoon salt ⓘ
- 3/4 cup raisins ⓘ
- 1/2 cup nuts ⓘ
- 1 1/2 cups shredded carrots ⓘ
- 1 1/2 cups shredded apple ⓘ
- 1/2 cup shredded coconut ⓘ
- 3/4 cup oil ⓘ
- 1/2 cup chopped nuts ⓘ
- 1/2 cup honey ⓘ
- 1/2 cup sugar ⓘ
- 3 beaten eggs ⓘ

Instructions
- Combine the all-purpose flour, baking soda, cinnamon, and salt in a bowl.
- Stir in honey, sugar, eggs, and oil until well mixed. Add vanilla and orange juice if desired.
- Add remaining ingredients—raisins, nuts, shredded carrots, shredded apple, shredded coconut, chopped nuts—and stir just until combined.
- Grease or line 12-cup muffin tins and fill each cup three-quarters full.
- Bake in a preheated oven at 375°F (190°C) for 18 to 20 minutes until golden and a toothpick inserted in the center comes out clean.
- Cool muffins on a rack before serving.
