Ingredients

  • 2 cups all-purpose flour
  • 2 1/2 teaspoons baking soda
  • 1 tablespoon cinnamon
  • 1/2 teaspoon salt
  • 3/4 cup raisins
  • 1/2 cup nuts
  • 1 1/2 cups shredded carrots
  • 1 1/2 cups shredded apple
  • 1/2 cup shredded coconut
  • 3/4 cup oil
  • 1/2 cup chopped nuts
  • 1/2 cup honey
  • 1/2 cup sugar
  • 3 beaten eggs
  • 3 beaten eggs

Instructions

  1. Combine the all-purpose flour, baking soda, cinnamon, and salt in a bowl.
  2. Stir in honey, sugar, eggs, and oil until well mixed. Add vanilla and orange juice if desired.
  3. Add remaining ingredients—raisins, nuts, shredded carrots, shredded apple, shredded coconut, chopped nuts—and stir just until combined.
  4. Grease or line 12-cup muffin tins and fill each cup three-quarters full.
  5. Bake in a preheated oven at 375°F (190°C) for 18 to 20 minutes until golden and a toothpick inserted in the center comes out clean.
  6. Cool muffins on a rack before serving.
