Chocolate Clouds are airy, melt-in-your-mouth meringue cookies with rich cocoa and chocolate flavors, perfect for sweet tooths and elegant treats or casual gatherings.

Ingredients

  • 2 oz unsweetened baking chocolate
  • 3/4 cup confectioners sugar, sifted
  • 3 tablespoons unsweetened cocoa powder, sifted
  • 3 large egg whites
  • 1/2 teaspoon cream of tartar
  • 1/2 cup white sugar

Instructions

  1. Line cookie sheets with aluminum foil.
  2. Finely chop baking chocolate in a blender and set aside.
  3. Stir together confectioners sugar and cocoa powder with a wire whisk and set aside.
  4. In a bowl, beat egg whites and cream of tartar with an electric mixer at medium speed until thickened.
  5. Increase to high speed and slowly add white sugar.
  6. Beat until stiff peaks form.
  7. Gently fold in the cocoa mixture and chopped chocolate until the mixture is uniformly brown.
  8. Drop by rounded teaspoonfuls onto the prepared cookie sheet.
  9. Preheat oven to 200°F (93°C).
  10. Let cookies dry at room temperature for approximately 45 minutes.
  11. Bake at 200°F (93°C) for 1 hour.
  12. Store in an airtight container.
