Ingredients

  • 1 cup onion
  • 1 cup green pepper
  • 1 large can tomatoes
  • 1 can cream-style corn
  • 1 can regular corn
  • 1 cup crushed Ritz crackers
  • 1 egg, whipped
  • 1 cup grated Cheddar cheese
  • 1 tablespoon chili powder

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix all ingredients: onion, green pepper, tomatoes, cream-style corn, regular corn, crushed Ritz crackers, whipped egg, grated Cheddar cheese, chili powder, salt, and pepper.
  3. Pour the mixture into a casserole dish.
  4. Bake uncovered at 350°F for 30 to 40 minutes until brown and bubbly.
