Ingredients

  • 1 cup sugar
  • 1/3 cup flour
  • 1/2 cup cocoa
  • 2 cups milk
  • 2 eggs
  • 1 tablespoon margarine
  • 1 teaspoon vanilla
  • pinch of salt
  • 1 cooked pie shell

Instructions

  1. Beat egg yolks in a bowl.
  2. Add milk, except 1/3 cup, to the egg yolks and mix well.
  3. Sift sugar, flour, cocoa, and salt together in a separate bowl.
  4. Place the dry ingredients in a double boiler.
  5. Stir the remaining 1/3 cup milk into the dry ingredients to form a smooth paste, then pour into the egg mixture.
  6. Cook over double boiler until the mixture thickens.
  7. Add margarine and vanilla, stirring until smooth.
  8. Pour the custard into the cooked pie shell.
  9. In a separate bowl, beat egg whites with 2 tablespoons sugar until stiff peaks form.
  10. Spread the egg whites over the pie filling and brown in the oven at 425°F until golden.
