Ingredients

  • 2 oz. unsweetened chocolate
  • 1 cup butter
  • 2 cups powdered sugar
  • 4 eggs
  • 2 tsp. vanilla extract
  • 1 tsp. peppermint extract
  • 12 vanilla wafers
  • 1/4 cup chopped pecans

Instructions

  1. Melt the unsweetened chocolate over low heat, stirring constantly.
  2. Set the melted chocolate aside to cool.
  3. Combine softened butter and powdered sugar, creaming until light and fluffy.
  4. Add eggs one at a time, beating well after each addition.
  5. Mix in the cooled chocolate, vanilla extract, and peppermint extract until well combined.
  6. Combine crushed vanilla wafers and chopped pecans; stir well.
  7. Sprinkle half of the crumb mixture into 12 ungreased muffin cups.
  8. Spoon the chocolate mixture over the crumb layer.
  9. Top with the remaining crumb mixture.
  10. Cover and freeze until firm.
