Ingredients

  • 12 oz. premade angel food cake
  • 4 to 8 Tbsp. white or dark rum
  • 6 oz. semi-sweet chocolate chips
  • 6 eggs
  • 2 tsp. vanilla
  • salt
  • 2 c. whipping cream
  • 1/4 c. sliced almonds, toasted

Instructions

  1. Break the premade angel food cake into bite-sized pieces and drizzle with rum; set aside.
  2. Melt semi-sweet chocolate chips over low heat in a double boiler until smooth; remove from heat.
  3. Add eggs one at a time to the melted chocolate, beating well after each addition until smooth.
  4. Stir in vanilla and a dash of salt.
  5. Whip 1 cup of the whipping cream until stiff peaks form.
  6. Fold the whipped cream into the chocolate mixture until well combined.
  7. In a separate bowl, whip the remaining 1 cup of whipping cream until stiff peaks form.
  8. Gently fold the whipped cream into the chocolate mixture.
  9. Layer the soaked angel food cake pieces in serving dishes, top with the chocolate mousse, and sprinkle with toasted sliced almonds.
