Ingredients

  • 2 Tbsp. butter or margarine
  • 2 c. sliced zucchini
  • 1/4 c. chopped onion
  • 1/4 c. chopped green pepper
  • 1 (12 oz.) can whole kernel corn
  • 1/2 tsp. basil
  • 1/8 tsp. pepper
  • 1/2 c. shredded Cheddar cheese
  • 1 large tomato, cut into wedges

Instructions

  1. In a medium skillet, melt butter over medium heat.
  2. Add sliced zucchini, chopped onion, and chopped green pepper; cook until zucchini is tender, about 8 to 10 minutes.
  3. Stir in whole kernel corn, basil, and pepper; heat thoroughly.
  4. Add shredded Cheddar cheese and cook until melted.
  5. Pour into a serving dish and garnish with tomato wedges.
