Ingredients

  • 3/4 cup peanut butter
  • 1/2 cup sifted powdered sugar
  • 1/2 cup butter
  • 3/4 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 2 cups sifted flour
  • 1/3 cup cocoa
  • 1/2 teaspoon salt

Instructions

  1. Combine peanut butter and powdered sugar; chill and set aside.
  2. Cream butter and sugar until light and fluffy.
  3. Add egg and vanilla; beat well.
  4. Blend in sifted flour, cocoa, and salt until dough forms.
  5. Shape dough into half teaspoon-sized balls.
  6. Flatten each ball and place 1/4 teaspoon of peanut butter mixture in the center.
  7. Shape dough around the filling, pressing to seal.
  8. Pinch ends and centers of cookies to resemble peanuts.
  9. Bake at 325°F (160°C) for 13 to 15 minutes.
  10. While warm, roll cookies in powdered sugar before cooling.
