- Preheat oven to 400°F.
- Line a jelly roll pan with parchment or waxed paper.
- Grease the pan liberally and dust with flour.
- Beat the egg whites until very stiff.
- Gradually add sugar, a spoonful at a time, beating until thick and glossy.
- Whisk the egg yolks.
- Add the egg yolks to the whites, then carefully fold in the flour, baking powder, and ground walnuts.
- Turn the mixture into the prepared pan and level the top.
- Bake for 12 to 14 minutes.
- When baked, turn out onto a sheet of waxed paper sprinkled with a little sugar.
- Roll from the short end like a jelly roll, keeping the paper inside.
- Cool before unrolling and serving.
