Ingredients

  • 3 large eggs, separated
  • 2 tsp water
  • 1/2 cup sugar
  • 1 cup flour
  • 1 tsp baking powder
  • 3/4 cup ground walnuts

Instructions

  1. Preheat oven to 400°F.
  2. Line a jelly roll pan with parchment or waxed paper.
  3. Grease the pan liberally and dust with flour.
  4. Beat the egg whites until very stiff.
  5. Gradually add sugar, a spoonful at a time, beating until thick and glossy.
  6. Whisk the egg yolks.
  7. Add the egg yolks to the whites, then carefully fold in the flour, baking powder, and ground walnuts.
  8. Turn the mixture into the prepared pan and level the top.
  9. Bake for 12 to 14 minutes.
  10. When baked, turn out onto a sheet of waxed paper sprinkled with a little sugar.
  11. Roll from the short end like a jelly roll, keeping the paper inside.
  12. Cool before unrolling and serving.
