- Cook the wide noodles in hot, salty water until just tender, then drain and set aside.
- Mix the ginger, sugar, salt, and soyu together to create a flavorful marinade or seasoning mixture.
- Prepare the remaining ingredients: slice the shrimp, julienne the string beans and celery, cook and chop the ham, beat the eggs, and chop the green onions.
- Heat a wok or large skillet over high heat, add oil if desired, and stir-fry the pork until browned.
- Add the shrimp, string beans, celery, ham, and ginger mixture; cook until vegetables are tender and shrimp are pink.
- Push ingredients to one side of the wok, pour in beaten eggs, scramble until just set, then combine with other ingredients.
- Add the cooked noodles and bean sprouts, toss everything together thoroughly, and cook for an additional 2-3 minutes.
- Garnish with chopped green onions before serving.
