A savory Chinese stir-fry featuring wide noodles, shrimp, pork, and fresh vegetables, flavored with ginger, soy, and a touch of sweetness, perfect for a hearty meal.

Ingredients

  • 2 Tbsp. sesame seed
  • 6 c. wide noodles
  • 5 fresh shrimp, sliced
  • 1 c. string beans
  • 1 stalk celery
  • 1/2 lb. pork
  • 2 eggs
  • 1/4 lb. ham, cooked
  • 2 c. bean sprouts
  • 2 stalks green onions
  • 1 piece ginger
  • 1/2 tsp. sugar
  • 2 tsp. salt
  • 1/2 Tbsp. soyu

Instructions

  1. Cook the wide noodles in hot, salty water until just tender, then drain and set aside.
  2. Mix the ginger, sugar, salt, and soyu together to create a flavorful marinade or seasoning mixture.
  3. Prepare the remaining ingredients: slice the shrimp, julienne the string beans and celery, cook and chop the ham, beat the eggs, and chop the green onions.
  4. Heat a wok or large skillet over high heat, add oil if desired, and stir-fry the pork until browned.
  5. Add the shrimp, string beans, celery, ham, and ginger mixture; cook until vegetables are tender and shrimp are pink.
  6. Push ingredients to one side of the wok, pour in beaten eggs, scramble until just set, then combine with other ingredients.
  7. Add the cooked noodles and bean sprouts, toss everything together thoroughly, and cook for an additional 2-3 minutes.
  8. Garnish with chopped green onions before serving.
